how to Select

Look for a firm texture and green color. If yellow, the plantain should be lightly firm, yielding to gentle pressure.

how to pRepaRe

Cut off both ends of the plantain, and then slice it in half. Slice the skin lengthwise from both sides without cutting into the fruit. Slowly remove the skin from the plantain and discard. Slice the plantain as desired, or as instructed by the recipe. Best if saut'ed, baked, or fried as a side dish such as chips.

how to StoRe

Store at room temperature. To extend shelf life, plantains can be stored at cooler temperatures, where they'll ripen as a normal banana would.
