Creamy Avocado Hummus


Instructions:

Ingredients: 

  • 15 ounce canned chickpeas, peels removed 

  • ¼ cup tahini 

  • 1 ripe Del Monte® Avocado 

  • 2 garlic cloves 

  • 1-2 tablespoons lime juice (can also use lemon juice) 

  • 1 teaspoon Kosher salt 

  • ½  teaspoon cumin 

  • ¼ cup ice cold water 

  • Pinch of paprika, optional 

  

Garnish 

  • olive oil 

  • red pepper flakes 

  • extra chickpeas 

  

Instructions: 

 

  1. Add rinsed chickpeas, Del Monte® Avocado, tahini, garlic, salt and cumin to the bowl of your food processor. Puree until a smooth mixture forms. 

  1. While processor is running, add ice cold water and lemon juice. Blend until smooth and creamy, approx 3-4 minutes. If the consistency is too thick, run processor and drizzle in a teaspoon or so of extra water. Blend until you reach desired smooth consistency. 

  1. Spread in a serving bowl and add a generous drizzle of olive oil. Garnish with extra chickpeas and red pepper flakes (optional) Enjoy with warm pita wedges, tortilla chips and/or your favorite veggies.
