Ingredients:

  • 1/4 cup preferred vegetable oil
  • 1/2 tsp. fine sea salt
  • 1/4 cup sugar
  • 2/4 tsp. baking powder
  • 1 large egg
  • 4 tbsp. butter, softened
  • 1/4 cup powdered sugar, sifted
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp. vanilla
  • 1/4 cup honey, runny
  • 1 1/2 cups plain Greek yogurt (preferably whole milk or 2%)
  • 1 cup Del Monte® Crimson Grapes, halved
  • 1 Del Monte® Banana, sliced
  • 1 cup Del Monte® Pineapple, cut into 1 x 1/2" slices
  • 1/2 cup Del Monte® Blueberries
  • 1 cup Del Monte® Blackberries

Instructions:

In a medium bowl whisk to combine flour, baking powder, and salt.

In a large bowl beat butter, oil, sugar, powdered sugar, and vanilla until smooth. Beat in egg until combined. Beat in flour mixture just until combined. Cover and refrigerate the dough for 30 minutes.

Preheat oven to 350℉. Line a large sheet pan with parchment paper.

Press dough into a 10-12” circle on prepared sheet pan, making sure it is even. You can use a small offset spatula to help spread the soft dough.

Bake until set and barely browned around the edges, 12-15 minutes. Let cool completely.While crust cools, in a medium bowl stir to combine yogurt, honey, and vanilla.

When crust is cool, spread yogurt mixture on crust, leaving a ½” border all the way around.

In concentric circles, arrange the pineapple, grapes, blackberries, banana, and blueberries as desired, using 1 type of fruit per circle. Serve immediately.
