Tropical Chia Pudding Cups

Ingredients:

  • ½ cup chia seeds
  • 1½ cups beverage-style unsweetened coconut milk
  • 1 tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 cups Del Monte Gold® Extra Sweet Pineapple, cut into¾” chunks
  • 2 Del Monte® Bananas, thinly sliced
  • ½ cup toasted coconut flakes
  • ½ cup roasted unsalted cashews

Instructions:

In a medium bowl combine chia seeds, coconut milk, maple syrup, and vanilla. Cover and refrigerate overnight.

Whisk chia mixture to break up any clumps. Have ready 4 small cups, glasses, or jars.

In bottom of each cup or jar, scatter a single layer of pineapple chunks and banana slices. Top each with ¼ cup chia pudding. Top with another layer of pineapple and banana, then sprinkle with 1 tablespoon each coconut and cashews. Top each with ¼ cup chia pudding, and garnish the top with a few pineapple chunks, banana slices, coconut, and cashews.

Serve or refrigerate, covered, until needed.
