Instructions:
Preheat oven to 375°F. Coat a 9 x 2” round cake pan with cooking spray and line the bottom with parchment paper.
Beat sugar, eggs, and salt in a large bowl with a hand mixer on high speed until thick, about 2 minutes.
In a medium bowl whisk to combine flour, baking powder, cinnamon, and cardamom, then mix into egg-sugar mixture just until combined. Stir in cream, butter, and vanilla just to combine.
Pour batter into prepared pan.
Bake cake for 25 minutes.
Cut apples into 4 pieces each by cutting on all sides of the core. Thinly slice apples, keeping each apple piece together.
25 minutes into baking time, arrange one section of apple slices in center of cake batter, pressing them down into batter to partially submerge them. Arrange the other apples around outside of cake in the same way. Continue baking until set and browned, about 20 minutes more.
In a small saucepan warm honey until runny. Lightly brush honey over warm cake and serve warm.
